Minimum Requirements

  • Matric / Grade 12
  • NQF 3 Bakery qualification
  • 2–4 years’ experience as a Baker, Bakery Supervisor, or Bakery Manager

Key Responsibilities

Merchandising Management

  • Conduct regular quality checks on bakery products
  • Execute merchandising plano guides in full compliance
  • Ensure products are handled and prepared according to SOPs
  • Produce products according to approved recipes and specifications
  • Ensure the department is ready for trade by store opening
  • Identify fast-selling products and analyse opportunities to improve sales and margins
  • Maintain adequate stock levels to meet customer demand
  • Ensure hygiene, housekeeping, and safe working standards are maintained
  • Oversee the implementation of promotional activities
  • Maintain clean and organised back-up and storage areas
  • Monitor sell-by dates and ensure stock rotation in line with policy and SOPs
  • Maintain merchandising and cleanliness standards throughout the day while minimising waste

Food Safety and Hygiene

  • Ensure strict adherence to hygiene and housekeeping standards
  • Monitor and enforce proper stock rotation procedures
  • Ensure compliance with food safety and health and safety standards
  • Address non-conformances through effective corrective actions
  • Implement cleaning schedules and verify sanitation procedures
  • Maintain and record the Food Safety Daily Checklist

Customer Service Management

  • Respond promptly to customer requests and enquiries
  • Assist customers with product alternatives during stock shortages
  • Communicate delivery timelines and stock availability
  • Ensure equipment is operational and the department remains customer-ready

Staff Management

  • Communicate operational priorities and updates to staff
  • Set targets, delegate responsibilities, and monitor performance
  • Address non-compliance with procedures, policies, and legislation
  • Attend regional meetings and share relevant updates with the team
  • Review and adjust staff scheduling to meet operational requirements
  • Coach and develop team members to improve performance

Administration

  • Ensure equipment is properly maintained and functioning effectively
  • Maintain general maintenance standards within the department
  • Monitor waste levels and ensure procedures are followed
  • Track turnover performance and identify opportunities to increase sales
  • Ensure all shelf-edge labels are current, accurate, and clearly visible to customers

Systems Management

  • Conduct gap scanning to identify out-of-stock items
  • Identify, count, and record out-of-stock and overstock products
  • Generate and analyse Excel reports from SAP and communicate stock concerns to Demand Planning
  • Process inventory transfers through SAP
  • Manage clearance processes and “reduced to clear” actions according to SOPs
  • Monitor electronic communications regularly throughout the workday
  • Process and record waste accurately
  • Ensure product inventory counts align with the National P&L schedule
