Job Description:
We are seeking an experienced Blockman to join our butchery team. As a Blockman, you will be responsible for cutting and preparing a variety of meat products to meet our high-quality standards. You will play a key role in maintaining stock levels, ensuring food safety, and working efficiently across various shifts, including Sundays and public holidays. This role reports directly to the Butchery Manager.

Key Responsibilities:
As a Blockman, you will be responsible for:

  • Precisely cutting and deboning meat according to quality standards, ensuring maximum yield and minimizing waste.
  • Recording quantities of meat received and sold, and maintaining accurate production and sales records.
  • Processing and manufacturing a variety of meat products such as sausages, mince, and other value-added items.
  • Operating bandsaws and other specialized butchery equipment efficiently and safely.
  • Ensuring proper cold chain management, maintaining ideal storage temperatures for meat products.
  • Adhering to food safety regulations and industry standards for meat handling and processing.
  • Assisting in production planning to maintain appropriate stock levels of raw and retail cuts.
  • Conducting block tests to evaluate cutting costs and yields.
  • Maintaining cleanliness and hygiene in the work area, ensuring equipment is sanitized and in good working condition.
  • Managing waste and shrinkage within the department to stay aligned with budgetary goals.
  • Participating in weekly stock takes to ensure accurate inventory management.
  • Demonstrating strong communication and time management skills to optimize workflow.
  • Staying up to date on promotions and butchery trends, ensuring excellent customer service.
  • Upholding a collaborative and positive work environment with a willingness to adapt to new techniques and processes.

Requirements:
To be considered for the Blockman position, you must have:

  • Matric certificate.
  • Previous experience as a Blockman.
  • Strong English communication skills.
  • Reside within 15km of the job location.
  • A clear criminal record.

Preferences (Not Mandatory):

  • South African candidates preferred.
  • Grade 2 Meat Cutting Certificate.
  • At least 2 years’ experience as a Blockman in a butchery setting.
