Job Description:
As a Blockman at Food Lovers Market, you will be responsible for expertly cutting and preparing various meat products in line with quality standards and production plans. Reporting directly to the Butchery Manager, you will work across different shifts, including Sundays and Public Holidays, ensuring that all operations comply with food safety regulations and butchery best practices.
Key Responsibilities:
- Accurately record the quantity of meat received and issued, keeping detailed records of sales and stock.
- Perform precise cutting and deboning of different meat species to maximize yield.
- Manufacture and process meat products, such as sausages and minces.
- Operate specialized butchery equipment, including bandsaws, while maintaining safety.
- Adhere to cold chain principles and ensure proper storage temperatures for meat products.
- Comply with all relevant food safety, health, and meat legislation.
- Conduct block tests to determine product costs and assist in production planning.
- Maintain stock levels and ensure availability of both unprocessed and retail cuts.
- Keep the work area clean, organized, and hygienic at all times.
- Manage waste and reduce shrinkage in the department according to budget targets.
- Assist with weekly stock takes and inventory management in the butchery.
- Collaborate with colleagues and customers, using strong communication and time management skills to enhance workflow.
- Stay updated on promotions, advertisements, and current butchery trends.
- Demonstrate knowledge of retail cuts, value-added products, and meat species.
- Maintain a positive attitude and promote a cooperative team environment.
- Be open to learning and adapting to new techniques and processes in meat preparation.
- Work efficiently under pressure while maintaining high energy levels.
Requirements:
- Matric (Grade 12 certificate).
- Proven experience as a Blockman or Butcher.
- Proficiency in English.
- Reside within 15 km of the store location.
- Clear criminal record.
Preferences (Not Required):
- South African citizenship.
- Grade 2 Meat Cutting Certificate.
- Minimum 2 years of experience as a Blockman in a butchery.
